American food: it's supposed to be loaded with flavor and easy to eat with your fingers. But some of your customers, though they crave the flavor and convenience of bar food, are not going to desire conventional options like chicken wings and burgers at the bar every time. Offering grilled chicken breast sandwiches is a great way to cater to those customers. These two sandwiches are really flavorful, juicy, and not that high in fat.
Mustard Barbecue Chicken Sandwich
This sandwich is topped with a house-made, mustard-based barbecue sauce, sliced onions, and crispy lettuce. The instructions below show you how to prepare one chicken breast – so you can make the sandwich to order – and also how to make an entire batch of the sauce.
For the sauce:
Combine these ingredients in a saucepan:
- 2 cups ketchup
- 1 cup Dijon mustard
- 1 cup apple cider vinegar
- ½ teaspoon cayenne pepper
- 1/2 teaspoon salt
- 1 tablespoon brown sugar
Bring the mixture to a simmer, and let it simmer for 5 minutes. Let cool, and store in a jar in the cooler.
To make a single sandwich, you need:
- 1 boneless, skinless chicken breast
- ¼ teaspoon kosher salt
- 1 teaspoon onion powder
- ¼ teaspoon ground black pepper
- 1 kaiser roll
- 5-6 thin slices of red onion
- 2 slices of fresh, red tomato
- 1 teaspoon butter
Season the chicken breast with the salt, pepper, and onion powder. Grill on a flat top for 8 minutes per side, or until the chicken is no longer pink in the center. Set the chicken breast aside. Spread the butter into the inside of the roll, and broil it until it's golden brown and crispy. Place the chicken on the roll, and top it with about 2 tablespoons of the prepared barbecue sauce. Layer on the tomato and onion, and serve.
Spicy Chicken and Mozzarella Sandwich
For this sandwich, you season a batch of chicken breasts ahead of time, and then grill them to order. The spicy chicken pairs wonderfully with fresh mozzarella and spinach.
Ingredients (for 12 sandwiches):
- 12 boneless, skinless chicken breasts
- 2 tablespoons onion powder
- 2 tablespoons cayenne pepper
- 2 tablespoons paprika
- 1 tablespoon kosher salt
- 1 tablespoon garlic powder
- 1 teaspoon white sugar
- 1 teaspoon dried thyme
- 3 tablespoons olive oil
- 12 kaiser rolls
- 12 ounces of fresh mozzarella cheese, sliced thinly
- 2 cups of baby spinach leaves
- 1 cup mayonnaise
Drizzle the chicken breasts with the olive oil, and rub them gently to distribute the oil. Combine the onion powder, pepper, paprika, salt, thyme, garlic, and white sugar. Mix thoroughly, and sprinkle evenly over the chicken breasts. Store in a covered container in the fridge.
When a customer orders a chicken breast, cook one on the flattop grill for about 8 minutes per side. Spread a Kaiser roll with about 1 ½ tablespoons of mayo, and place the chicken on top. Top with one ounce of mozzarella and some baby spinach.Share
